The way we play EVE is a reflection of who we are.
If you enjoy flexing your muscles, destroying stuff and get a thrill out of the fear/attention/respect it gives you, then that's how you'll play. The only "honor" for this kind of player is in how many people he's destroyed. These kinds of players usually have a rampant thirst for killmails and don't usually care who or what they kill/destroy/maim.
If you enjoy a challenge and testing your skills, then that's how you'll play. These kinds of players will usually seek out challenging targets or fight between equals. The "honor" for this kind of player is in knowing that his skills are the best of the best. These kinds of players may not bother non-PVP players in favor of more satisfying targets.
If you enjoy working with a group to build wealth and control territory, then that's how you'll play. These kinds of players will tend to attack other players based on their group-based objectives or territorial boundaries. These player's "honor" is based on the wealth, power and prestige of their corporation or alliance, and accomplishing the collective goals of their group.
Others enjoy cooperating with and helping others. Their "honor" is in being respectful and helpful to others. Perhaps they're members of an anti-pirate corp or work as a group to mine or rat in low-sec.
I'm sure there are many other types of "honor" in EVE. The difference between EVE and reality is that in EVE there is no morality. It's all fictitious. In EVE especially, "honor" is only what we make it for ourselves. Some player's sense of honor imitates their sense of honor in real life, based on real life morality, most do not. Even in real life "honor" is very subjective. The only consistent element we have in real life on which to base our sense of "honor" is morality (and even that is debatable).

edit- not to be confused with political skill or trustworthiness on the alliance/corp level. If you can't separate e-honor and eve politics you are prob bad at the later.
